Harvest Bisque Recipe

Harvest Bisque

Serves 3
1 tbsp organic coconut oil
4 cups organic butternut squash
1/3 cup organic pumpkin puree
1 cup organic sweet potatoes (peeled, diced)
1 organic carrot
1 organic apple
1 organic medium onion (diced0
2 garlic cloves (minced)
1/2 tsp ground cumin
1/4 tsp ground nutmeg
4 cups organic vegetable broth
1/3 cup organic coconut cream
Salt and pepper to taste

Warm coconut oil in large pot. Add diced onions and saute for approx 5 minutes. Add minced garlic and saute another 1-2 minutes. Add in vegetable broth, butternut squash, carrots, sweet potatoes, apples, pumpkin puree, cumin, nutmeg, and season with salt and pepper and bring to a boil. Once boiling, turn down heat and simmer for 18 minutes or until vegetable are fork tender. Then remove from heat and blend with immersion blender until soup is a puree consistency. Stir in coconut cream and cook for another 5 minutes. Garnish with pepita seeds.
